I started using Gnome instead of XFCE, and switched from ‘full hinting’ of fonts to ’slight hinting’ (which seems to have made a massive difference in terms of font quality).

Avi, good to see my old laptop being used for a worthy cause :)
that apart, as a non-tech user of Windows here is my take:
1) it looks sleeker (a non-tech female user i must specify).
2) some functionalities as you mention are unexpected, yet i agree it may be more a question of getting used to change.
